Almond, Macadamia and Chocolate Friands

These almond, macadamia and chocolate friands are perfect for a party or afternoon tea.

1 1/4 cups icing sugar
3/4 cup plain flour
1 cup almond meal
3/4 cup dark chocolate bits
1/2 cup macadamia nuts
6 egg whites
185 g butter melted


1. Preheat oven to moderate, 180°C. Lightly grease 8 recesses of a mini loaf pan

2. Sift icing sugar and flour together into a large bowl. Blend in almond meal, 1/2 cup chocolate chips and the macadamia nuts.

3. In a small bowl, lightly whisk egg whites with a fork until frothy. Add to dry ingredients and mix lightly.

4. Blend in butter, stirring until combined. Divide mixture among prepared recesses. Sprinkle each with remaining chocolate chips.

5. Bake for 15-20 mins until golden and cooked when tested with a skewer. Cool in pan for 5 mins before turning onto a wire rack to cool completely.
